INGREDIENTS
- 4 tablespoons of Natura's® Tomato Paste 113 gr
- 4 pieces of chicken
- 1 liter of water
- 2 tablespoons of oil
- 1/2 onion, finely chopped
- 3 garlic cloves, minced
- 1 stalk of celery, finely chopped
- 1/4 fresh red chili, chopped
- 1 cup of rice
- 2 tablespoons culantro, chopped
- 1/2 cup of fresh peas
- 1/2 carrot peeled and finely chopped
- 10 olives finely chopped into slices
- Salt and spice to taste
Arroz con Pollo Panameño (Panamanian Chicken Rice)
Chicken rice with aromatic tomato flavor
PREPARATION
- In a pot, bring the water to a boil with the salt and spices, then add the chicken and cook for 25 minutes.
- Set aside 2 cups of chicken broth and remove the chicken to pull apart and set aside.
- In a separate pot, heat the oil and fry the onion along with the garlic, celery and paprika for 3 minutes, then add the 2 cups of broth, the Natura's ® Tomato Paste, and then mix.
- Add the rice, shredded chicken, half the culantro, the carrot, the peas, and then mix everything together. Let cook until the broth reduces and begins to dry.
- Let cook until the broth reduces and begins to dry.
- Lower the heat, cover the rice cooker and cook for 20 minutes to finish.
- Uncover, add the olives, the rest of the culantro, mix, and it's ready to serve.
